I can't fault the ATI FirePro V4800. It's an affordable 1GB video adapter and, best of all, it supports 3 screens simultaneously off the one graphics card - which makes it quite simply the cheapest way to get yourself into a 3-screen setup.
We installed it into a base-level Dell Vostro system which is being used for standard business applications (a lot of Excel and MYOB), and it was up and running in minutes with no headaches whatsoever.
If you wanted a high-performance gaming adapter you might choose something else, but this is the best card on the market for standard 3-screen business requirements. Just make sure you've got a power supply with enough grunt to handle it (I recommend a minimum of 550W).
